Stuffed Capsicum (Bell Peppers)

???????????????????????????????Ingredients
6 medium sized capsicums
–Note: I have taken all three types: Green, Red and Yellow. If you dont like the taste of Red (a bit sweet) and Yellow (a bit sour/tangy) then use green only.
3 medium sized potatoes,boiled and mashed.
Paneer (Indian cottage cheese),grated 200 grams
–Note: If you dont like paneer taste, absolutely no problem at all in skipping panner for this recipe.
Cashewnuts,coarsely ground 10-12
Raisins 12-15
Dry mango powder (amchur) 1 teaspoon
Red chilli powder 1.5 teaspoons
Cumin powder 1 teaspoon
Turmeric powder 0.5 tsp.
Garam masala powder 1 teaspoon
Fresh coriander leaves,finely chopped a few sprigs
Salt to taste
Oil 2 tablespoons
Onion ,chopped 1 medium
Ginger,chopped 1 inch piece
Green chillies,chopped 1-2

–Note: I know two methods for preparing this dish: Frying Pan method and Microwave. I prefer the frying pan methods as the flavors come really well using this method.

Method 1 (Frying Pan, I prefer this 🙂 ):
1. Slice off a thin portion from the top of the capsicums.
2. Gently remove seeds to make them hollow. (Make sure it should not make unwanted cuts in the sides of the capsicum)4
2. Now, slice off thin portion from the bottom of the capsicum so that they can stand steady when placed on the frying pan.
3. Mix well potatoes, paneer, cashewnuts and raisins.
4. Heat oil in a pan and add onion.??????????????????????????????? ???????????????????????????????
5. Cook till translucent on a medium heat, add ginger and green chillies.???????????????????????????????
6. Add amchur, red chilli powder, cumin powder, garam masala powder and saute for 2-3 minutes, or till the aroma of the dry masalas comes.
7. Add the potato mixture and cook on low flame for 3-4 minutes add coriander leaves and salt. Keep aside.
7 Stuff this mixture into the capsicum shells.
8. Heat oil in a frying pan.
8. Place the stuffed capcicums.
9. Fry from all the sides on low-medium flame till all the sides including top becomes nice and crispy.???????????????????????????????
10. Serve immediately with phulkas or naans.

Method 2 (Microwave):
1. Slice off a thin portion from the top of the capsicums.
2. Gently remove seeds to make them hollow. (Make sure it should not make unwanted cuts in the sides of the capcicum)
2. Now, slice off thin portion from the bottom of the capsicum so that they can stand steady when placed on a baking tray.
3. Mix well potatoes, paneer, cashewnuts, raisins, amchur, red chilli powder, cumin powder, garam masala powder, coriander leaves and salt. Keep aside.??????????????????????????????? ??????????????????????????????????????????????????????????????
4. Heat oil in a pan and add onion.
5. Cook till translucent on a medium heat, add ginger and green chillies.
6. Mix the potato mixture and to cook on low flame for two minutes.???????????????????????????????
7. Stuff into the capsicum shells.
8. Preheat the oven to 225º C for 10-15 minutes.
9. Bake Capsicums at 225 ºC till the sides of the capcicum looks crispy (brownish in color).
10. Serve immediately with phulkas or naans.
