Serves : 5-6
1 1/2 cups gram flour or chick pea flour (besan in hindi)
3 small to medium size tomato, finely chopped
2 small to medium size onion, finely chopped
–Note: Tomato and Onion should be very finely chopped otherwise if will be difficult to flip the omlette while frying.
3/4 inch ginger, finely chopped
2 small green chilies, very finely chopped (slit into two and then chop)
1/2 cup fresh green coriander leaves, very finely chopped
–Note: You can add finely chopped spinach leaves as well.
1/2 tea spoon red chilli powder
1/2 tea spoon turmeric powder (optional)
2 to 3 cups water
salt as per taste
Oil fo frying the omlette.
A generous pinch of asafoetida
1/2 tea spoon pinch of garam masala
1/2 tea spoon carrom seeds
1 tea spoon cumin seeds
–Note: I have added all of the above in this recipe.
1. Mix Besan, dry masala’s and salt together.
2. Add water to make a thick paste, make sure there are no lumps.
3. Add chopped tomatoes, onions and fresh green coriander.
4. Add water to make a medium consistency batter.
5. Heat a tava or a heavy bottomed pan.
6. Smear some oil.
7. Pour the batter on the pan (low-medium heat).
8. Spread it lightly with the back of the spoon.
9. You can even rotate and tilt the pan so that the batter takes a round shape. Don’t worry if you are not getting a perfect round shape.
10. Add some oil drops on the edges & top of the omelette.
11. Cover the pan for 3-4 minutes.
11. Remove the cover and cook for 2-3 more minutes, flip and cook the other side as well.
11. Cook the tomato omelette till both sides are properly cooked.
12. Serve hot with spicy green chutney or curd or launji.
Method for Spicy Green Chutney:
Take equal amount of fresh green coriander and mint leaves and add lemon juice, 6-7 green chillies and salt to taste.
(For one cup each of corinader and mint leaves, 2-3 tea spoon of lemon juice should be sufficient).
Blend it in a mixture with very little amount of water. That’s it.
–Note: You can add 3/4 inch pience of ginger and 4-5 flakes of garlic as well.
