The link has methi mathri recipe, you can omit methi (fenugreek) to get plain Mathris.

In the same recipe if you reduce the ghee (while kneeding the dough), by half then you can get crips papadi which can be used for making Papadi Chaat.

Ingredients: Assembling Khasta Mathri Chaat
250 gms cold well beaten curd
1 cup green mint and coriander chutney
1 cup tamarind chutney
1-2 tsp red chili powder
1-2 tsp cumin powder
1-2 tsp chaat masala
1-2 tsp black salt or common salt
1 cup barick sev (nylon sev)

Optional
1 onion finely chopped
Half cup chopped coriander leaves

Ingredients: Spicy green mint and coriander chutney:
1/2 cup chopped mint leaves (pudina)
1 cup chopped fresh coriander leaves (hara dhania)
2-3 green chili, chopped (add more if you want more spicy)
1-2 tea spoon lemon juice
Salt to taste

Optional:
Black salt

Ingredients: Sweet tamarind chutney:
1 Cup seeded Tamarind
2 Cups (less or more as per your taste) Sugar
1/2 tea spoon Black salt
1 tea spoon Red chilli powder
1 tea spoon Roasted cumin powder
1.5 tea spoon Dry ginger powder (soonth)
1/4 cup water
Salt to taste

Optional:
Cinnamon 1 inch stick powdered
Raisins 2 tablespoons

Method : Green Chutney:
Blend all the ingredients mentioned in the section above with very little water to a smooth paste, keep aside.

Method : Sweet tamarind Chutney:
Soak Tamarind in water for 4-5 hours or overnight.
Using hands remove the pulp
Sieve the pulp through a strainer.
Add water and Sugar to sieved pulp and cook on low flame for 10-15 minutes (stir in between).
Add the spice powders, black salt
Cook for another 4-5 minutes
Switch off the burner and let the mixture cool (Add raisins if opted for)
–Note: If the chutney becomes too thick add some water to liquidize it. Then boil for 4-5 minutes otherwise the chutney will taste watery.

Assembling the chaat:
Arrange the mathris in a plate.
Top it up with the green chutney as per your taste.
Top it up with the sweet chutney as per your taste.
Top with cold yogurt as much as you want.
Again top it up with the green chutney as per your taste.
Again top it up with the sweet chutney as per your taste.
Sprinkle some chaat masala, red chili powder and roasted cumin powder.
Sprinkle nylon sev on top
Garnish with Finely chopped onions and fresh finely chopped green coriander
Serve and consume immediately.
