Vegetable Sandwich

Ingredients: For Two sandwiches:
8 medium sized sandwich bread slices white / whole wheat
25 grams Salted butter
8 thin slices of boiled potato
4 thin slices of tomato.
4 thin slices of onion
1 small sized capsicum, sliced
1/2 tea spoon chaat masala
1/2 cup grated Mozzarella cheese

Optional Ingredients:
4 thin slices of cucumber
4 thin slices of boiled beetroot
4 generous pinches of freshly grounded black pepper
1/4 tea spoon red chilli

For Green Chutney:
2 Table spoon fresh green coriander
1 Table spoon fresh mint leaves
4-5 green chillies (please adjust as per your taste, depends on how much hot you like)
3-4 tea spoon lemon juice
Salt as per taste

Method for green chutney:
1. Add coriander, mint leaves, green chilies to a grinder.
2. Grind with minimum amount of water to make a fine paste.
3. Add lime juice and salt to taste.

Method of making sandwich:
1. Apply generous amount of butter on a bread slice and evenly spread the green chutney all over it.IMG_E4342
2. Place 4 slices of boiled potato.
3. Sprinkle chat masala over the potato slices. You can add black salt/freshly grounded black pepper/red chilli powder as well.IMG_E4344
4. Apply butter on another bread slice followed by spreading little amount of green chutney and use it to cover the slice having potatoes, keep the chutney side downwards.IMG_E4346
5. Apply butter and green chutney to the top of the bread which was used to cover the potato slices. IMG_E4349
6. Place tomato slices and cucumber slices.IMG_E4353
7. Apply butter on another bread slice followed by spreading little amount of green chutney and use it to cover tomato and cucumber slices, keep the chutney side downwards.
8. Apply butter and green chutney to the top of the bread which was used to cover the tomato and cucumber slices.IMG_E4356
9. Add mozzarella cheese and place the capsicum slices.IMG_E4359IMG_E4361
10. Apply butter on another bread slice followed by spreading little amount of green chutney and use it to cover cheese capsicum slices, keep the chutney side downwards.IMG_E4362
11. Apply butter on the top layer. IMG_E4365
12. Heat a heavy bottomed pan, add butter and roast the sandwich from both the sides on low flame till the bread gets nice golden-brown color a crisp texture.IMG_E4383
